Almond Cheesecake Bars Healthy Gourmet Recipe
I love Almond Cheesecake Bars – A Healthy Baking gourmet recipes that use almond, and almond extract is so fabulous! I always have a can of roasted almonds in the pantry for snacking on too. I also love cheesecake, but making and storing a big cheesecake takes time and space. Cheesecake bars, on the other hand, are quick and they store beautifully, taking up very little room in the fridge.

Prep: 20 min. Bake: 35 min. + cooling
Ingredients
2 cups all-purpose flour
1 cup butter, softened
1/2 cup confectioners' sugar
FILLING:
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 teaspoon almond extract
2 eggs, lightly beaten
FROSTING:
1-1/2 cups confectioners' sugar
1/4 cup butter, softened
1 teaspoon almond extract
4 to 5 teaspoons milk
Directions- Combine the flour, butter and confectioners' sugar; press onto the bottom of a greased 13-in. x 9-in. baking pan. Bake at 350° for 20-25 minutes or until golden brown.
- For filling, in a small bowl, beat the cream cheese, sugar and extract until smooth. Add eggs; beat on low speed just until combined. Pour over crust. Bake for 15-20 minutes or until center is almost set. Cool on a wire rack.
- Combine the frosting ingredients until smooth; spread over bars. Store in the refrigerator. Yield: 3 dozen.
- 1 bar equals 145 calories, 9 g fat (5 g saturated fat), 35 mg cholesterol, 68 mg sodium, 15 g carbohydrate, trace fiber, 2 g protein. Diabetic Exchanges: 1-1/2 fat, 1 starch.
